Cauliflower "Fried Rice" Recipe

Fried rice is a popular dish, but can contain too much fat, salt and sugar. Swapping cauliflower for rice while keeping the veggies and protein creates a super healthy alternative with all the flavor you could wish for!

Ingredients:

2lb head of cauliflower (or 2lbs ready to cook cauliflower)
2 cups
Peas and chopped carrots (fresh or frozen)

Small onion

Cloves garlic minced

eggs (beaten)
3 tablespoons
Oil (coconut, canola, etc)
4-5 tablespoons
Soy Sauce

Cooking Steps: 
Step 1:
Prepping the "rice"
Chop the cauliflower into very small pieces. Transfer to food processor and pulse until cauliflower resembles rice. Set aside. (Skip this step if using 'ready to cook' cauliflower rice.)
Step 2:
Cooking!
Heat the oil of your choice (we love coconut oil) over medium/high heat. Fully cook the beaten eggs and set aside. Add onions and cook until translucent. Add the grated cauliflower, cook, stirring often, for about 3 minutes. Add the peas and carrots and continue cooking until the cauliflower "rice" is tender-crisp and the vegetables are warmed through, a few minutes. Stir in the soy sauce and eggs. Taste and adjust seasoning. Serve hot.
